These taste just like a Milkybar but without the chocolate and processed sugar.
They’re a great snack if you’re pregnant or breastfeeding and a perfect addition to school lunch boxes as they are packed full of healthy fats, protein, fibre and natural sugars to keep energy levels high. They’re also gluten, wheat and dairy free.
If you prepare them on a Sunday you should have enough to last all week (depending how popular they prove!).
This recipe makes about 10 small energy bites, so it can easily be doubled if you have a bigger family (or if you just can’t resist them yourself!).
50g cashew nuts
75g pitted dates
2 tbsp nut butter (I used Whole Earth 3 Nut Butter, but I also love Meridian’s Crunchy Peanut Butter too)
2 tbsp coconut flour (don’t worry if you can’t get coconut flour, rice flour is also great)
1 tbsp honey (I used Forever Bee Honey)
Optional: 2 tbsp mixed seeds (I used chia, pumpkin and sunflower)
1 tsp vanilla extract
Put all your ingredients into a food processor and whizz up until well mixed. Then, take small handfuls of the mixture and roll into balls.
Store in the fridge (or try one straight away!)
