With Royal Ascot, Wimbledon, Henley around the corner, our thoughts are turned to strawberries and cream.
This super easy mug cake recipe from one of our fav authors, Sue Moorcroft, is a great one to try out with the kids – a crowd pleaser that tastes delicious.
Strawberries and cream mug cake
Quick and easy treat for summer. Great to make with the kids. Serves 2 or 3, depending on the size of your mugs.
Ingredients
1 medium egg
2tbs strawberry yoghurt
1tbs vegetable oil
1/8tsp baking power
1/8tsp vanilla extract
4tbs sugar
5tbs self-raising flour
Fresh strawberries – allow two fair-sized strawberries per mug cake
Squirty cream or whipped cream
Method
Coat the inside of the mugs with cooking spray.
Combine egg, yoghurt, vegetable oil, vanilla extract, baking powder, sugar and flour in a bowl. Mix well until smooth and all one consistency.
Half-fill each mug. (Any more and you may have spillage.) Cook in your microwave for 3-4 minutes or until you can insert a cocktail stick and it comes out clean.
While the mug cake is cooking, wash, dry, hull and neatly slice strawberries. If using whipping cream, whip to a thick and ‘peaky’ consistency. When cake is cooked, top with cream and make pretty arrangement with sliced strawberries.
Serve immediately.
